Good metal tongs
- I would have to say next to a good knife, it would have to be a pair of GOOD metal tongs. They become an extension of my hand. From getting pasta out, to stiring, etc. Always have on in my hand while I'm cooking

The absolute necessity
- Although I am tempted to agree that a wooden spoon is the most necessary item, I still have to go back to basics and say that running water is the most important feature of my kitchen. I can manage without everything else, but carrying water to the kitchen by the bucket is miserable.

My crock pot
- Hands down, my favorite kitchen tool is my crock pot. After a long day of work or, let's be honest, play- dinner's done. Enough said!

They are absolutely perfect for all manner of jobs in the kitchen from beating eggs to turning over chicken in a Teflon pan. They have become an absolute must in my kitchen. My Mortar and Pestles
- I have three different mortar and pestles, A Mexican molcajete, a large granite Thai sort and a small ceramic. Each has it's uses and I use them all. I could get by using my coffee grinder or blender but it isn't quite the same. The resulting texture is different. A salsa cruda made in a molcajete tastes better than one made in a blender.

Wooden Spoons
- I love a well-made wooden spoon. They are durable, easily washable, heat-proof, versatile...I simply could not substitute plastic for all the things I can accomplish with simple wooden spoons. I can understand why they were a groom-to-bride wedding gift in some cultures!

Just one?
- Took sometime to decide..........but, hands down, the winner........my really sharp cleaver!Chops everything, smashes lots of garlic cloves and when my family sees me with it....they stay out of my kitchen,:)

- used daily, saves lots of time..the humble potato peeler. Try peeling a spud the old way sometime, with a knife and you will see what I mean!! Mind you, I'd be pretty lost without my Magimix food processor too.

Chef's Knife
- Alas, I do love my stand mixer and would miss it terribly if it were gone but I still could manage. (A lot less bread though - love those dough hooks!) I would surely perish without my big chef's knife - probably could not cook at all without it!

My wooden lemon juicer
- I love my stand mixer too, but since I use lemon in so many things (I am from Morocco too), I could not be without this wonderful carved wooden lemon juicer, You cut the lemon in half thru the wide part and then insert the pointed end of the juicer and twist left and right and the juice comes pouring out!
