I'm pretty sure everyone has a sweet tooth. Who can resist such gooey goodness as baklava? Or how many of us can actually turn down figs in syrup if they're offered to us? I know I can't. Middle Eastern cuisine is full of delightful desserts and sweets that are sure to satisfy the most severe craving for sugar. Is there a Middle Eastern dessert you just can't say no to? Your cake looks btfaeiuul, and very traditional! My fave is the cream cheese filled- it seems moister than most others! Often, the cakes are made from 3 long tubes of filled dough, which are braided, and then curled into an oval where the ends are joined. This makes a cake that is lighter and airer, with more little "pockets" to discreetly hide the "baby"!

Middle Eastern Desserts

Ma'amoul are one of the most incredible cookies you will ever have! They are made usually with a butter, semolina and flour based cookie dough. A ball of dough is formed and a depression is made to contain either a date, walnut or pistachio filling. The dough rim on top is pinched to enclose the filling. They are placed on a cookie sheet and a decorative design can be made on top with a fork for an extra special effect. They are baked till barely colored and dusted with powdered sugar while still hot. There are special wood molds that have carved-out designs that you can press the ball of dough in preparation for filling the ma'amoul. Each mold is carved by hand and the shape of the mold indicates what kind of filling will contain one of the three fillings whether they be date, walnut or pistachio. I bought these charming ma'amoul molds at Sahadi's on Atlantic Avenue in Brooklyn. They are in the back of the store and they cost only $3.25. I believe they are made in Syria.
