Taboule is a cracked wheat salad from the Middle East. I fell in love with it in Egypt when I was learning Egyptian Dance in a hotel which over looked the Pyramids of Giza. What I Did

2 cups bulgur, washed and soaked for 10 minutes
The marinade
This is a marinade because everything is very finely chopped
Juice of 2 lemons
2 garlic cloves, chopped
1 bunch spring onions, chopped
10 tomatoes, skinned and chopped
1 bunch parsley, chopped
1 bunch coriander, only the leaves, chopped
Pepper and salt
Strain the bulgur. Scoop all the ingredients into a large bowl and mix, it will be quite wet and juicy.
Leave for at least 30 minutes. Check the consistency. The bulgur may be chewy but not hard. At this point you will know if a little more marinade is needed.
Tips and Tricks
- Try this marinade on soaked quinoa or on cooked barley for a lovely East meets West version.
