A tomato salad is perfect for cookouts and a great alternative to a regular iceberg lettuce salad.
Prep Time: 15 minutes
Ingredients:
- 3 medium tomatoes
- 1 onion, chopped finely
- 2 gloves garlic, minced ot 1 tablespoon prepared minced garlic
- 2 tablespoons lemon juice
- 5 tablespoons olive oil
- 2 tablespoons white vingear
- salt and pepper to taste
Preparation:
Slice tomatoes and place in a large serving plate or bowl. Add onions and gently combine.In a small bowl, combine garlic, olive oil, lemon juice, vinegar, salt and pepper. Mix well. Drizzle over tomatoes and onions. Refrigerate or serve immediately.
Garnish with fresh parsley or mint.
