Khoshaf - Dried Fruit Salad


Khoshaf is a Middle Eastern fruit salad made up of dried fruit. Sugar is added to fruit and soaked overnight to form a delicious sauce that makes this salad sweet and perfect any time of the year.


  • 1 1/2 cups dried prunes
  • 1 1/2 cup dried apricots
  • 1 cup raisins
  • 1 cup dried figs
  • 1/2 cup walnuts
  • 1/2 cup pine nuts
  • 1/4 cup blanched slivered almonds
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon rose water
  • 2 tablespoons orange blossom water
  • 3 cups water


Cut dried apricots and dried figs in half. Place dried fruit and nuts in a large bowl. Pour sugar over mixture. Boil 1 1/2 cups of water and pour over fruit and nut mixture. Cover and allow to sit approximately one hour.

In a small saucepan bring remaining 1 1/2 cups water to a boil and add cornstarch. Stir well. Pour over fruit and nut mixture. Add rose water and orange blossom water.

Cover and refrigerate at least 24 hours. Tastes best when allowed to sit for two days. Stir gently before serving.
