Israeli Salad Recipe

Recipe for an Israeli salad, a famous vegetable salad from Israel. Israel has very good vegetables and the assortment makes it unique.

Prep Time: 15 minutes

Ingredients:

  • 2 tomatoes, chopped
  • 2 cucumbers, peeled and chopped
  • 1 green pepper, seeded and chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 small onion, finely chopped
  • juice from 1 lemon
  • 4 tablespoons olive oil
  • salt
  • pepper

Preparation:

In a serving bowl, combine chopped vegetables. Toss gently.

In a small bowl, combine lemon juice, olive oil, and salt and pepper (to taste). Drizzle over vegetables and toss. Serve immediately or cover and refrigerate for up to 2 days.
