This salad is a slightly different take on a popular salad from Saudi Arabia. Green beans are the focus but toasted almonds are added to give some crunch and additional flavor. Perfect warm or cold!
Ingredients:
- 2 lbs fresh green beans, trimmed and cut into 1 inch pieces
- 2 red onions, sliced thin
- 4 tablespoons olive oil
- 3/4 cup sliced almonds, toasted
- 4 tablespoons balsamic vinegar
- 1/2 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Preparation:
In a large pot, steam beans for approximately five minutes. Transfer to a colander and rinse with cold water.
In a large frying pan, saute onions in olive oil just until tender. Add green beans, water, salt, and pepper and allow to come to a boil. Reduce heat and cover. Allow to simmer for five minutes or until beans are tender. If there is excess liquid in the pan, remove cover and raise heat until liquid has evaporated.
Transfer beans and onions to a serving bowl and drizzle with balsamic vinegar. Sprinkle with toasted almonds.
Serve warm or chill.
