Ezme Salatasi

Ezme salatasi is a spicy alternative to a tossed salad. It contains lots of fresh veggies and spices that will fire up the palette. This salad is great served as an appetizer, or served alongside a meat dish like lamb or beef.

Ingredients:

  • 3 medium tomatoes, peeled
  • 1/2 cucumber peeled
  • 1 green or red pepper
  • 1 small onion
  • 2 cloves garlic, crushed
  • 2 tespoon parsley finely chopped
  • 1 tablespoon red pepper pulp, or ground red pepper
  • 3 tablespoon lemon juice
  • 4 tablespoon olive oil
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon parika

Preparation:

Remove seeds from tomatoes, cucumber, and green peppers.

Chop all vegetables into very fine small pieces. Use a sharp knife, or a food processor. If using a food processor, be sure to drain the liquid the veggies produce and discard.

Combine all ingredients and mix well. Serve immediately, or chill for 1-3 hours in the refrigerator. Chilling the salad will produce a more full flavor, bold, spicy salad because the sitting allows the spices to settle and become absorbed.
