Recipe for chickpea salad, a favorite in the Middle East, especially in Lebanon. It is also called Salata Hommus.
Ingredients:
- 1 15 oz. can chickpeas
- 1/4 cup olive oil
- 6 cloves garlic, mashed
- 2 tablespoons lemon juice
- 1 tablespoon mint, finely chopped
Preparation:
Drain and rinse chickpeas 2-3 times. Allow to drain well in colander.
Place chickpeas in serving bowl and add lemon juice. Mix gently, taking care not to mash the chickpeas. Add garlic and mint, mixing well. Drizzle with olive oil.
Serve immediately.
