- 4 cups baby spinach or mixed greens
- 1 1/2 ribs celery, chopped into 1/4 inch pieces
- 1/2 cup walnuts, toasted
- 8 yellow dates, pitted and sliced
- 1/4 cup crumbled feta cheese
Place a layer of baby spinach or mixed greens onto a serving plate or bowl. Spread celery, walnut, and date mixture atop leaves.
Crumble feta cheese over top and serve immediately or refrigerate in an airtight, plastic container.
If using a dressing, such as a vinaigrette or olive oil, drizzle over salad just before serving.
