This is a very easy dish to make and is very similar to American potato salad, but without the mayo. It is just as tasty, and more healthy!

Ingredients:
- 2 pounds red potatoes or new potatoes, peeled
- 4 tablespoons lemon juice
- 7 tablespoons olive oil
- 2 tablespoons basil
- 3 tablespoons fresh mint, chopped
- 1/2 teaspoon red pepper
- 6 green onions, chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Preparation:
Cut potatoes in small cubes and boil for 20-15 minutes, or until tender. Drain and place in medium bowl.
Add onions, mint and basil. Mix well, being careful not to crush the potatoes.
Stir together olive oil and lemon juice. Stir in black pepper, red pepper, and salt. Pour over potatoes. Chill for an hour in the refrigerator and serve.
