Tomato Lentil Soup

This hearty tomato lentil soup is simple to make and bursting with flavor. Serve with pita bread and you have a truly comforting meal. This is the perfect soup for vegetarians, or those looking for a delicious meat-free main dish.

Ingredients:

  • 1 1/2 cups lentils, rinsed
  • 6 cups water
  • 2 medium onions, chopped
  • 1 teaspoon garlic powder
  • 2 1/2 cups stewed tomatoes
  • 1 small can tomato sauce
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon cumin

Preparation:

In a large saucepan, add water and lentils and bring to a boil. Cover and let cook for 15 minutes.

Heat olive oil in a small frying pan. Add onions and cook, stirring frequently, until onions are tender and slightly browned.

When lentils have cooked, add onions, garlic powder, cumin, chili powder, salt, and black pepper. Stir well.

Add stewed tomatoes and tomato sauce, bring to a boil, then cover. Turn heat down to low and allow to cook 25 minutes, or until lentils are tender.
