Mashed Sweet Potatoes

Sweet potatoes are no longer for the holidays! Mashed sweet potatoes are delicious and go with just about everything -beef, chicken, or lamb. I prefer to serve it with beef or a grilled chicken breast.

Prep Time: 15 minutes

Cook Time: 45 minutes

Ingredients:

  • 1 1/2 pounds sweet potatoes
  • 1 1/2 pounds white potatoes
  • 1/2 cup butter
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla
  • 1 cup warm milk

Preparation:

Peel potatoes and cut into cubes. Place in a large saucepan and boil until soft and tender, about 20 minutes.

Strain from water and reserve 1/2 cup of water. Set aside and place potatoes in a mixing bowl.

Mash potatoes with masher and add butter and milk. Allow butter to melt and stir with a fork. Continue to mash as you stir.

Add spices and vanilla. Mash with masher or electric mixer. If potatoes are not creamy enough, add some of the potato water or more milk to desired consistency.

Sprinkle cinnamon on top and serve immediately.
