Stuffed Potatoes (Batatis Meschi)

Stuffed potatoes are absolutely delicious! Peeled potatoes, stuffed with ground beef and spices, then baked to perfection make a great main course or side dish.

Ingredients:

  • 6 medium potaotes
  • 1/2 pound lean ground beef
  • 1/4 cup parsley, finely chopped
  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • salt
  • pepper
  • 16 oz. tomato sauce

Preparation:

Brown ground beef in large frying pan. In the meantime, peel and core potatoes.

Add onions and garlic to browned ground beef. Continue to cook on low heat, until the onions become soft. Remove from heat and allow to cool.

Once ground beef is cool, stuff mixture into the potatoes. Place potatoes upright in large baking pan.

Once all potatoes are stuffed, add tomato sauce to bottom of pan with 2 cups of water. The potatoes should be covered halfway.

Cook in oven at 350 degrees for 30 minutes. Sprinkle with salt and pepper.

Serve immediately. Serves 6-8, depending on size of potato.
