Middle Eastern Potato Salad

You will love this potato salad! It is a great alternative to tradition, mayonaisse based potato salad, not to mention much healther. Serve it hold or cold, it is great for barbecue side dishes or as a light side dish to any meal.

Prep Time: 7 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 lbs. red potatoes, cubed
  • 1 clove garlic, crushed
  • 1/4 cup flat leaf parsely, finely chopped
  • 2 tablespoons, plus 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • salt and pepper or dukkah spice mixture (see recipe below)

Preparation:

Cube potatoes and wash well under cold water. Place in large saucepan and boil for 25 minutes or until tender.

Drain potatoes and add garlic and parsley. Mix gently to avoid crushing the potatoes. Add lemon juice and olive oil and gently mix.

Place potato salad in serving dish and sprinkle with desired salt and pepper or dukkah spice mixture for extra flavor! See recipe for dukkah spice mixture.
