Grilled Eggplant

Grilled eggplant slices have to be the most healthy and delicious side dishes for any meal.

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 medium eggplant, cut into 1/2 in slices
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • salt and pepper

Preparation:

  1. Preheat grill.
  2. Drizzle each eggplant slice with olive oil, salt and pepper, and cumin. Repeat on the other side. To make this easier, you could combine all ingredients in a bowl and allow to marinate for about 5 minutes.
    1. Grill eggplant for about 4-5 minutes each side.
  3. Serve grilled eggplant with labneh for dipping or spread a little labneh on each slice before serving. Serve about 5-6 slices per person.
