Grilled eggplant slices have to be the most healthy and delicious side dishes to any meal.

- 2 medium eggplants, cut into 1/2 in slices
- 1/4 cup olive oil
- 1 teaspoon cumin
- salt and pepper
Drizzle each eggplant slice with olive oil, salt and pepper, and cumin. Repeat on the other side. To make this easier, you could combine all ingredients in a bowl and allow to marinate for about 5 minutes.
- Grill eggplant for about 4-5 minutes each side.
Serve grilled eggplant with labneh
for dipping or spread a little labneh on each slice before serving. Serve about 5-6 slices per person.
