Couscous with Apricots

Couscous with apricots is more commonly served with a poultry main dish like baked chicken or turkey.

Ingredients:

  • 4 cups couscous
  • 6 oz. dried apricots
  • 2 tablespoons cup green onions, chopped
  • 1 teaspoon salt

Preparation:

Place apricots in a medium bowl. Cover apricots with enough boiling water to cover. Allow to sit for 10-15 minutes, or until apricots are moistened. Drain.

Place couscous in medium bowl, and cover with 2 cups boiling water. Allow couscous to sit, covered for 10 minutes or until water is absorbed.

Combine couscous and apricots with green onions and salt.

Serve couscous with apricots immediately as a side dish.
