- 1 pita, white or whole wheat
- 3 eggs
- 2 tablespoons onions, diced
- 2 tablespoons green bell pepper, diced
- 1 tablespoon olive oil
- salt and pepper to taste
In a medium frying pan saute onions in olive oil, just until tender. Add green peppers and stir an additional minute or two until peppers are slightly soft.
Place pita bread in a toaster oven, or warm in a small frying pan, turning once for even heating.
Pour eggs into frying pan with onions and peppers. Allow to set and then begin tossing gently to scramble. Once eggs are done, remove from heat and set aside.
Remove pita from pan or toaster oven and set on plate. Cut in half and scoop egg mixture into pockets.
Makes two pita scramble sandwiches.
Try different vegetables or add your choice of shredded cheese for a variation.
