What is a turkey brine?

By Saad Fayed, About.com

Question: What is a turkey brine?

What is a turkey brine? I hear about it every Thanksgiving, but never know what it means.

Answer: A brine is basically water mixed with salt, sugar and other seasonings which the turkey is soaked in for a length of time. Typically you should soak a turkey one hour per pound. I brine my turkey every Thanksgiving and I have a brine recipe that I use year after year. It is very simple to make from prep to finish. Try this on your next Thanksgiving turkey to ensure a bird worth gobbling up! It's even great for chicken, too!
