These stuffed potatoes are a perfect light meal. Serve stuffed potatoes with a simple salad.

Ingredients:
- 8 large potatoes, peeled and cored
- 1 lb. ground beef
- 2 teaspoons parsley, finely chopped
- 1 teaspoon salt
- 1.2 teaspoon pepper
- 1 teaspoon lemon juice
- vegetable oil for frying
- 32 oz. tomato sauce
Preparation:
In deep fryer, fry potatoes for 3 minutes. Allow to drain on paper towels.While potatoes drain, mix ground beef with parsley, salt, pepper, and lemon juice.
Preheat oven to 350 degrees. Stuff the potatoes with the beef mixture.
Place in a 9x12 baking dish. Cover with tomato sauce and bake for 25 minutes uncovered.
