Stuffed Green Peppers

Stuffed green peppers are easy to make and can be prepared a day or two ahead of time and cooked on the day of an event. Plus, the ingredients are easy to find and very economical.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • 6 -8 green peppers, firm
  • 1 1/2 lbs. ground beef
  • 2/3 cup uncooked white rice
  • 2 medium tomatoes, chopped
  • 2 tablespoons parsley, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 2 cups water

Preparation:

Cut and remove the tops to green peppers. Deseed, replace tops and set aside.

In a medium bowl, combine ground beef, rice, tomatoes, parsley, salt, and pepper.

Stuff green peppers about 3/4 full of meat mixture and replace tops.

Place stuffed peppers in large stockpot standing up. Add water. Bring to a boil and simmer for 30-45 until rice is done.
