Okra with Tomato Sauce

This super easy recipe is a fast version of the original. This is a classic Middle Eastern food dish that is commonly served over white rice.

Ingredients:

  • 16 oz frozen okra
  • 1/4 cup olive or vegetable oil
  • 1 tablespoon minced garlic
  • 1 medium onion, chopped
  • 1 28 oz can of tomato sauce and 1 14 oz can of tomato sauce
  • 1 small can of crushed tomatoes
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon salt

Preparation:

In a pan, heat oil to a medium heat and add onions and garlic. Allow to saute for about 5 minutes, until onions become translucent. Add frozen okra, tomatoes, and tomato sauce.

Bring to a boil, add salt and pepper, and allow to boil for about two minutes. Reduce heat to a simmer, cover, and cook until okra is tender, which is about 15-20 minutes.

Serve immediately over steamed white rice. Garnish with fresh chopped parsley.
