Kofta Pita Sandwich

I love kofta and I love pita bread. So, the natural progression would be to put them together and make a sandwich. Add some veggies and a little hummus, and you have one of the best sandwiches for lunch or a light dinner. This recipe is the perfect solution for leftover kofta from the night before.

Ingredients:

  • kofta * See recipe below
  • hummus * See recipe below
  • 1 large onion, sliced
  • 1/2 cup parsley. finely chopped

Preparation:

Prepare kofta and hummus. Hummus can also be store bought. These days hummus is sold in just about every supermarket.

Prepare onions and parsley. Mix well.

Heat pita in the microwave or on the stove. Stuff the pita with kofta, onions, and parsley. Add desired amount of hummus with a spoon. Enjoy!
