I have great memories of being a very small child and eating ful and pita bread right off my father's plate. He would scoop some ful onto pita that he broke off from the loaf before I could even say "more". This recipe is super simple - no boiling of dried beans required!
Ingredients:
- 1 can of fava beans
- 1 teaspon minced garlic or 2 cloves finely chopped
- 1/2 teaspoon lemon juice
- 1 tablespoon tahini
- pinch of salt
- 3 tablespoons hot water
- 1 tablespoon olive oil
- parsley, finely chopped
Preparation:
In a saucepot, combine fave beans (with liquid), minced garlic, and lemon juice. Bring to a boil. Remove from heat.
Drain excess liquid and coarsely mash fava beans with fork. Return to low heat. Add tahini and salt. Add water and olive oil, one tablespoon at a time, and stir to desired consistency. Add more water or olive oil, if needed.
Serve ful for breakfast with hot pita bread.
