Lamb Kebabs

Lamb is so tender that it really is an ideal meat for a kebab. Kebabs are basically meat and/or veggies cooked on a skewer. I prefer flat skewers over rounded ones. The meat and veggies cling better. Serve your kebabs on a bed of rice with lemon juice, or with a salad and bread.

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Ingredients:

  • 2 lbs lamb, chopped into cubes
  • 2 medium yellow onions, quatered or cut into large chunks
  • 2 green or red peppers, chopped into chunks
  • 2 medium tomatoes, cut into wedges or 1 pint of cherry tomatoes
  • 1 teaspoon crushed garlic
  • 3 tablespoons lemon juice
  • 2/3 cup vegetable oil
  • 1/2 teaspoon tumeric
  • 3/4 teaspoon coriander
  • 1/2 teaspoon cumin
  • dash cayenne pepper (if desired)

Preparation:

Prepare Marinade

Place spices, oil, and lemon juice in medium bowl. Mix together. Add lamb and cover. Marinate in the refrigerator for at least 1 hour, no more than 3 hours.

Assembling the Skewers

Place meat and veggies on skewers, about 5 pieces on each. You can alternate by placing meat, then vegetable, or however you would like to assemble them.

Place on heated grill for 5-7 minutes on each side. You can also broil them for 5-7 minutes on each side in your oven.

Serve!

Variations

Kebabs are great because you can put anything on them. Make them vegetarian by adding only veggies. You can also omit vegetables and use any kind of meats you like. If you don't have time for marinade, a little salt and pepper can go a long way.

Once cooked, take kebabs off skewer and put in pita bread pocket. This makes a nice sandwich.

Tips for Cooking Kebabs

The type of skewer you use is important. I prefer metal, flat skewers. Many people use wooden disposables, but they can break and splinter very easily, especially if children are using them. Metal skewers can get very hot, so be careful when serving.
