Kubideh Kabob - Ground Lamb Kebabs

Kubideh Kebabs are an Iranian favorite. They are my favorite too because they are so easy and have a great flavor. Serve over a bed on white, basmati, or saffron rice with pita bread. You can add vegetables to the skewers if desired.

Prep Time: 10 minutes

Cook Time: 12 minutes

Ingredients:

  • 1 lb. ground lamb
  • 1 onion, finely chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Preparation:

Heat up grill and prepare for cooking.

In a mixing bowl, combine all ingredients, mixing with hands or wooden spoon.

Refrigerate for about 10 minutes.

Roll meat into a ball about the size of a tennis ball and put onto a flat skewer. Compress and shape it like a cigar, about 5-7 inches long. Repeat with remaining meat and skewers.

Place on grill and cook for about 4-6 minutes each side, or until done.
