Prep Time: 10 minutes
Ingredients:
- 1 15 oz. can chickpeas/garbanzo beans
- 8 oz. tofu
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 2 tablespoon olive oil
- 2 teaspoons garlic, minced
- 1/4 teaspoon cumin
- 1/4 teaspoon ground red pepper
Preparation:
In a food processor, blend tofu, tahini, beans and olive oil. Add remaining ingredients and blend into a creamy, smooth dip.Serve tofu hummus with fresh veggies or pita bread. Tofu hummus also makes excellent dip for falafel or as a spread for sandwiches.
Store hummus in an airtight container in the refrigerator for up to three days.
