Soybean Hummus

Soybean hummus is a great variation of traditional hummus. More hummus recipes

Ingredients:

  • 1 can soybeans or 1 cup frozen edamame (green soybeans), shelled
  • Liquid from canned soybeans (if used)
  • 2-3 tablespoons lemon juice (depending upon taste)
  • 1 ½ tablespoons tahini
  • 1 clove garlic, crushed
  • 1 teaspoon salt

Preparation:

In a blender or food processor, blend soybeans, lemon juice, tahini, garlic, and salt until thoroughly mixed and smooth. Add liquid from soybeans until desired consistency, creamy and paste-like. Serve immediately or cover and refrigerate for about an hour. Serve with fresh vegetables, pita bread, or pita chips.

Soybean Hummis, Member emcontrary

I made this with canned black soybeans and it was delicious. I added 1/2 teaspoon ground cumin and 1/4 teaspoon red pepper flakes, but followed the remainder of the recipe exactly. The advantage of any kind of soybean is that they are low in carbohydrates and suitable for a low-carb diet. Black soybeans are supposed to have a better taste than white soybeans which is why I used them. Edamame have not been dried, so will have a different taste than either and I will try them next.
