Cook Time: 10 minutes
Ingredients:
- 1 can chickpeas, rinsed drained, with liquid saved and set aside
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 2 teaspoons lemon juice
- 1/4 teaspoon salt (optional)
- 2 teaspoons parsley, finely chopped
- 1 cup of shelled, roasted hazlenuts
Preparation:
Take roasted hazlenuts and place in blender or food processor. Add about a teaspoon of the chickpea liquid from the can and blend to a smooth consistency.Add olive oil, garlic, lemon juice, salt, and parsley and blend to a smooth hummus consistency. If it is too thick, you can add 1 teaspoon of chickpea liquid or water at a time until you reach the desired consistency.
Serve warm with pita bread, crackers, or vegetables.
