Hazlenut Hummus

Thus nutty, version of hummus is without tahini - only hazlenuts to replace it. The flavor is unique and wonderful on bread, crackers, or veggies.

Cook Time: 10 minutes

Ingredients:

  • 1 can chickpeas, rinsed drained, with liquid saved and set aside
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt (optional)
  • 2 teaspoons parsley, finely chopped
  • 1 cup of shelled, roasted hazlenuts

Preparation:

Take roasted hazlenuts and place in blender or food processor. Add about a teaspoon of the chickpea liquid from the can and blend to a smooth consistency.

Add olive oil, garlic, lemon juice, salt, and parsley and blend to a smooth hummus consistency. If it is too thick, you can add 1 teaspoon of chickpea liquid or water at a time until you reach the desired consistency.

Serve warm with pita bread, crackers, or vegetables.
