- 2 tablespoons hummus hummus
- 1 small onion, thinly sliced
- 1 tomato, thinly sliced
- Pepperjack cheese, shredded
- 1 tablespoon butter, slightly softened
- 2 slices sourdough bread
Butter one side of bread and lay flat onto skillet surface. Top with cheese and veggies.
Spread hummus onto other slice of bread and lay flat, hummus side down, over cheese and veggies. Spread remaining butter over second piece of bread.
Allow to cook approximately two minutes, checking to make sure bread is not getting too dark. Flip and repeat on other side.
Serve immediately with soup and pita chips for the perfect, quick and easy meal.
