This variation on the traditional hummus is delicious! Instead of using chickpeas, black eyed peas are used. It provides a fun twist to a Middle Eastern favorite.

Yield: 4-6 servings
Ingredients:
- 1 15 oz. can black eyed peas, rinsed and drained
- 2 tablespoons of tahini
- 1 teaspoon minced garlic or 2 cloves garlic, crushed
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- salt and pepper to taste
- warm water
Preparation:
Combine ingredients in blender or food processor. Blend for 3-5 minutes on low until thoroughly mixed and smooth. If hummus is too thick, add warm water, 1 tablespoon at a time, until desired consistency.
Place in serving bowl, and create a shallow well in the center of the hummus. Add a small amount (1-2 tablespoons) of olive oil in the well. Serve immediately with fresh, warm or toasted pita bread, or cover and refrigerate.
