Mortar and Pestle

Definition: A bowl and bat shaped object used to pulverize foods, such as seeds, herbs and spice. In the Middle East, it is also used to grind coffee beans.

Mortar and pestles are still used today in cooking and are favored over food processors. Often, the aroma of spice and herbs are burned off in processing, so using a mortar and pestle can produce a richer flavor.

They can be made from porcelain, stone, lava, ceramic, granite and other materials. Stone and wood are preferable because they have a high resistance of absorbing the flavor and scent of foods.

To use, place food in mortar (bowl), and push down with pestle, making a circular motion to grind food. Be sure not to use too much force, and have a firm grip on the mortar.
Clean by hand with mild soap and warm water, Dry with towel. Not recommended to use in dishwasher.
