One of the most important ingredients in hummus, other than chickpeas, is tahini. Tahini is a paste made from sesame seeds and is considered a Middle Eastern pantry essential. I like to make my own hummus and, in turn, make my own tahini. I always end up having a lot of tahini left over though. No need to let that extra go to waste! There are many recipes where tahini is used to add it's one of a kind flavor. Here is a list of my favorites.

1. Broccoli with Tahini

This is the perfect appetizer for your next party or get together. Cauliflower can also be subsituted and is just as tasty. Steamed broccoli is mixed with sauce or can be used to dip.

2. Samak bi Tahini (Fish with Tahini)

Fish with tahini is easy and perfect for the seafood lover! It is called samak bi tahini in Arabic and is a local favorite in many Middle Eastern regions. You can use any type of fish for this dish. Tilapia does very well and is readily available at most markets.

3. Beef Shawarma

Shawarma is like the ultimate on the go meal. Thinly sliced meat, wrapped in a pita bread with veggies and sauce is a delicious quick meal. Tahini, along with lemon juice, garlic, and yogurt make up the sauce that goes with this Middle Eastern classic.
