Date Nut Muffins

Date nut muffins are perfect any time of the year, but I really enjoy them during the holidays. They can be used as a quick breakfast on a cold, winter morning, a hearty mid-afternoon snack, or in place of dessert.

Ingredients:

  • 2 cups flour
  • 1 cup dates, chopped
  • 3 eggs
  • 1 1/2 cup whole milk
  • 4 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/2 cup walnut, chopped
  • 5 tablespoons baking powder

Preparation:

Preheat oven to 425 degrees.

Lightly grease a muffin pan or line with muffin cups.

In a large bowl, add flour, baking powder, dates, walnut, and salt. In a separate bowl, whisk eggs and milk. Pour into bowl of flour mixture, add melted butter, and stir well.

Fill muffin cups about 3/4 full. Place in oven and cook 16-20 minutes or until tops or lightly golden brown.When done, remove from oven. Let cool for a few minutes if usinga greased muffin pan. If using paper muffin cups, allow to cool completely.
