Couscous with Peas

Couscous with peas is a simple recipe that is perfect when you want a pasta or rice side dish with a lot of flavor, but little effort. Perfect when served with chicken dishes.

Ingredients:

  • 2 cups couscous
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 1/2 cup frozen peas
  • 1 32 oz. can chicken broth, low sodium
  • salt and pepper to taste
  • olive oil for sauteing

Preparation:

Saute onions and garlic in olive oil for 3-5 minutes. Do not allow to brown.

Add chicken broth and peas. Bring to a boil.

Add couscous and salt and pepper. Cover and remove from heat.

Allow couscous to sit for 5- 10 minutes or until all broth is absorbed. Fluff with fork and serve immediately.
