Couscous with Raisins and Carrots

Couscous with raisins and carrots is the perfect side dish to poulty dishes. I like to serve this as a side dish for Thanksgiving, but is perfect for everyday.

Ingredients:

  • 2 cups couscous
  • 32 oz. can vegetable broth
  • 1 small onion, finely chopped
  • 1 cup raisins
  • 1 cup carrots thinly sliced

Preparation:

In a saucepan, combine vegetable broth, onion, and carrots and bring to a boil. Reduce heat to low and allow to simmer for 5-8 minutes. Return to a boil and add couscous.

Remove from heat and add raisins. Cover and allow to sit for 10 minutes or until vegetable broth is absorbed.

Fluff couscous with a fork and serve immediately.
