Ingredients:
- 1 whole roasting chicken (3 lb chicken)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon turmeric
- olive oil, vegetable oil, butter
- 1 lemon, quartered
Preparation:
Preheat oven to 400 degrees. Wash chicken with cool water and pat dry with a paper towel. Place in roasting pan.
Rub outside of chicken with just enough oil to coat and allow spice to adhere to skin. Sprinkle salt and pepper all over chicken, followed by cumin and turmeric. Place quartered lemon inside cavity.
Bake uncovered for 1 to 1 1/2 hours until outside is golden brown and the internal temperature of the chicken reaches at least 165 degrees F.
