As a child, I always remember eating this over rice. Little did I know I was eating spinach, just as my kids are clueless about it, too. This is a great way to get your kids to eat spinach without complaint! Of course, not telling them it's in there helps, too.
This recipe is incredibly simple. Using frozen spinach really cuts back on the cooking time. Feel free to use fresh if you prefer.
Prep Time: 10 minutes
Cook Time: 1 hour, 30 minutes
Total Time: 1 hour, 40 minutes
Ingredients:
- 1 lb stew beef, cut into 1/2 inch cubes
- 10 oz frozen, chopped spinach
- 2 15 oz cans of crushed tomatoes or tomato sauce
- 1 yellow onion, chopped
- 2 teaspoons minced garlic
- salt and pepper
Preparation:
Place stew beef, onions, garlic, salt and pepper in a 3 quart pot and cover with water. Bring to a boil, reduce heat to simmer and cover. Simmer until meat is tender, about 30 minutes.
When meat is tender, add frozen spinach. Do not drain. Once spinach is loose, add 1 can of crushed tomatoes or tomato sauce and mix well. Add second can if you feel you want more tomato flavor, as spinach does absorb a lot of tomato sauce.
Continue to simmer about an hour on low.
Serve over cooked white rice with a salad.
