Baked Falafel Pita Sandwich

aked falafel sandwiches are perfect for those who are watching their waistlines. Baked falafel has less calories and tastes just as good.

Ingredients:

  • Ingredients for Falafel:
  • 1 15-19 oz can chickpeas, drained
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoons of fresh parsley, chopped
  • 2 tablespoons all purpose flour
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon baking powder
  • salt and pepper
  • 2 tablespoons olive oil
  • For the Falafel Hot Sauce (optional)
  • 3/4 cup tomato paste
  • 1/4 cup water
  • 1/2 teaspoon harissa (see below) or hot sauce
  • 2 cloves garlic, pressed
  • 1 teaspoon lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • Bread:
  • Choose pita bread or any flatbread

Preparation:

First, prepare baked falafel. Drizzle olive oil evenly in shallow baking dish. Preheat oven to 350 degrees.

While oven is preheating, mash chickpeas with mortar and pestle or in food processor. Add onions and garlic and blend.

Add remaining ingredients to make a thick paste-like consistency. Shape into ping pong size balls and place in preheated baking dish. Bake for 15-20 minutes, turning halfway through cooking.

Making Falafel Hot Sauce

In a medium saucepan, combine all ingredients. Bring to a boil, then reduce heat to low and allow to simmer for 15 -20 minutes. Sitting frequently. Allow to cool. Falafel hot sauce can be stored for two weeks in the refrigerator.

Assembling the Falafel Pita Sandwich

Place falafel in pita or wrap in flatbread. Top with your favorite veggies and cheese if you like. Ideas include lettuce, tomato, onions, pickles, and even fries or onion rings. Drizzle falafel hot sauce and enjoy!
