Chicken Caesar Pita

This chicken caesar pita is so easy, but really hits the spot for a fast lunch. If you are a fan of the caesar salad, then this is the pita sandwich for you. I like mine on piping [link url-http://mideastfood.about.com/od/breadsrice/r/pitabreadrecipe.htm]hot pita bread[/link], but this can also be served chilled, too.

This recipe serves two.

Prep Time: 5 minutes

Ingredients:

  • 2 boneless, skinless chicken breast half cooked, OR 1 small can chicken packed in water
  • 2 loaves of pita bread
  • Romaine lettuce
  • 1 small cucumber, thinly sliced
  • 1 small tomato, chopped
  • Caesar salad dressing
  • Optional:
  • ¼ cup onion, chopped
  • ¼ cup red bell pepper, chopped

Preparation:

If using cooked chicken breast, cut into thin slices, or drain can of chicken.

Take loaf of pita and cut in half. Fill each pocket with chicken, romaine lettuce, cucumber, and tomato.

Drizzle Caesar dressing over ingredients inside each pocket.

For variety, chicken can be heated prior to filling or serve cold. Also, for a more salad like sandwich, mix all ingredients together, including the dressing, before filling pitas.
