What to Do With All Those Dyed Easter Eggs...

So, Easter is now over. You had a good time decorating eggs with the kids and having a delicious Easter Sunday meal with friends and family. But, you still have what seems like seven dozen (although brightly decorated) hard boiled eggs in your 'fridge. There are only so many egg salad sammies and boiled egg breakfasts you can eat. Trust me - I know. I lived in a house where boiled eggs where there all the time. When I was hungry, I was told to eat a boiled egg. No thought from my mother to consider other foods - she would always just tell me to eat an egg.

You would think I would resent those white, shiny ovals of goodness after eating so many as a kid. But, I haven't. I have, however, found other ways to eat them! One of my family's favorite hardboiled egg recipe is deviled eggs with hummus. What a tasty low fat version of a classic recipe!
