I love new potatoes. There are dozens of ways to cook with them and even better, they are a foolproof vegetable to cook. One of my favorite ways to cook with new potatoes is to roast them. It's easy, requires very little prep time, and pairs well with just about any meat, although I prefer them with poultry.
I like to use traditional Middle Eastern spices and herbs to make roasted new potatoes, especially if I am making roasted chicken or lamb. The flavor of the potatoes complements the lamb or chicken very well without overpowering the meal.
