Spices are a staple in Middle Eastern cooking -- it is what it sets Middle Eastern food apart from similar cuisines like Mediterranean food. You will find the same dishes in Middle Eastern and Mediterranean cooking, but the spices used differ greatly. Both are absolutely delicious, but utilize different spices and cooking methods (in some cases).
