As you may know, pumpkin is my favorite fall food, aside from the pomegranate. It encompasses the colors and ambiance of the season and I try to incorporate it into my kitchen as much as I can. One of my favorite recipes is for pumpkin couscous. It's one of those comfort foods -- like macaroni and cheese or mashed potatoes. It just hits the spot!
Couscous is a traditional Middle Eastern rice dish that can be made hundreds of different ways. My pumpkin couscous recipe uses fresh pumpkin, which some may find intimidating to cook with, but is actually very simple! Once you cook with a fresh pumpkin once, you'll wonder why you never tackled it before.
