Middle Eastern food is very vegetarian friendly. A lot of recipes do not use meat to begin with and many are adaptable -- like stuffed grape leaves. Stuffed grape leaves are one of my family's favorite food. I make a huge batch on Saturday and they are gone by Sunday. The kids grab them from the fridge and eat them cold -- they really can't get enough of them. But, when my daughter decided to become a vegetarian, I realized I had to modify my recipe so she could still have her grape leaves.
The vegetarian version is excellent and much healthier than the version that uses ground beef. I still prefer the traditional stuffed grape leaves, but love the meatless version as well. Here is my recipe for vegetarian stuffed grape leaves.
