Not long ago, I received an email from a reader who wanted to make his own pita bread, but add cinnamon and raisins. Initially, it sounded like fantastic idea, but on second thought, I realized it wouldn't work out so well. The results would be less than ideal. Here is my response as to why cinnamon raisin pita would be a bad idea....
Cinnamon raisin pita may not be a good idea at home, but you can make authentic and delicious white and whole wheat pita at home. All you need is a few common ingredients and an oven, and you are good to go. Making pita can be a lengthy process, but is super easy. Make your own pita bread today!

I have done this. You need to chop the raisins finely to stop them from becoming charcoal but my children loved them with cream cheese. I know this is not Middle Eastern but I was looking for what they would love in their lunches. This is what they came up with. It was grand.
This is my recipe and you could sub raisins for the apples imo. Just be sure to knead well so the raisins aren’t on the surface. If any do end up on the surface, not covered with dough, remove them before baking or pinch them off after baking.
Apple Cinnamon Breakfast Pitas
- makes 12 pita
1-1/4 tsp yeast
2 Tbs warm water
1 cup apple juice
1 tub (113 g) unsweetened applesauce (about 1/2 cup)
2 Tbs ginger syrup
3/4 to 1 tsp cinnamon
3/4 tsp salt
1 Tbs oil
2 Tbs oat bran
2 tsp gluten
3/4 cup whole wheat flour
1/4 cup kamut flour
1-1/2 cups unbleached flour
1/4 cup chopped walnuts
1/2 cup finely diced dried apples
