I was surprised you didn’t mention my favorite, rhoomy cheese. Egyptians call it Gibna rhoomy (not using the “j” sound). It think it’s made of sheep milk and is very sharp. You can get it plain or with peppercorns in it. It is delicious and versatile. I grill it on bread and even use it to top ratatouille. Yum!
