A Variety of Cheeses Hail from the Middle East

Who doesn't love cheese? Cheese is probably one of the most versatile food for any type of cuisine, especially Middle Eastern food. Many types of cheeses hail from the Middle East. Some are more commonly found like feta, but more are more foreign to most western palettes, like ackawi or nabulsi. They are delicious cheese that offer more mystery than say, the standard brie blue cheeses at wine tasting parties (not to say that these are not excellent cheeses). I was surprised you didn’t mention my favorite, rhoomy cheese. Egyptians call it Gibna rhoomy (not using the “j” sound). It think it’s made of sheep milk and is very sharp. You can get it plain or with peppercorns in it. It is delicious and versatile. I grill it on bread and even use it to top ratatouille. Yum!
