How to Make the Best Stuffed Eggplant

Tired of the same fried or steamed vegetables? Why not stuff them? In the Middle East, stuffing vegetables with meats, rice, and spices is a regular on families' menus. Stuffed eggplant is one of my favorite Middle Eastern dishes. It's easy and takes very little time to prepare. It's even better the second day!

I just wanted to say that I enjoy your column very much. I live in Greece, and find that the the mid-eastern dishes contribute a variety to my table which is very compatible with the Greek cuisine.
Also, I have become a vegatarian lately, and find that the somewhat contrived dishes found in vegetarian cookbooks and restaurants are not to my liking. I would much rather implement traditional meatless recipes from various sources of ethnic cuisine.
