Pita Bread Pizzas

My kids love pita bread pizza! I set up pita loaves, sauce, and topping buffet style and they make their own. All you have to do is bake and you have the perfect appetizer or snack!You can make these pizzas with more sophisticated toppings like with feta or goat cheese, sun dried tomatoes or black olives. Be creative and have fun!
Pita Pizzas Make an Awesome Boy Scout Camping Food Too!
This weekend, my oldest son and I were special guests for a local Boy Scout troop camping trip. One of the requirements was that we cook our own dinner over an open fire. Interesting, I initially thought. (FYI, I am not too much of a camper and prefer modern luxuries like, umm, a stove for one!). So I packed some fresh pita, a jar of pizza sauce, and mozzarella in my pack and we made a go of it. I took my pita and placed it in a dutch oven, poured my sauce and cheese on and I was done! About 8 minutes later, I had pizza that I was proud of! The boys enjoyed the pizza and really welcomed a change from the standard hotdogs.I also marinated stew meat the night before with some onions, carrots, and cherry tomatoes. I wrapped servings in foil and put them in the freezer. The morning of the campout, I removed them from the freezer and put the wrapped servings in my pack. They were thawed by dinnertime and ready to cook! Absolutely delicious! I have to admit that there is an immense sense of pride gained by cooking your own food without modern convenience. I highly suggest it!
